Nanbubijin's Junmai Daiginjo originates in Kunohe, a mountain village in southern Iwate Prefecture, where the brewery sources water from the Kunohe River system—soft, mineral-light water that defines the house style. The sake employs a 50% rice polish ratio (daiginjo threshold), exposing only the starchy heart of each grain and eliminating protein-rich outer layers that would cloud or roughen the profile. Fermentation occurs under cool-temperature control, a discipline that slows yeast metabolism and allows delicate esters to accumulate without aggressive alcohol burn. The result is a sake of high transparency—aromas and flavors emerge with surgical clarity rather than layered complexity. No oak aging, no added alcohol: this is pure fermented rice expressing terroir through restraint. The 2023 vintage (or current release) drinks immediately and will hold for 2–3 years in cool storage.
