In 2017, Marcus Consolini became the first non-Japanese owner of a sake brewery in Japan when he acquired Daimon Shuzo — a 1826-founded kura in Katano City, Osaka, whose 6th-generation brewer Yasutaka Daimon and toji Ryosuke Uei have kept the Kamigata house philosophy intact. That philosophy is Rich Dry: full rice umami and body anchored by refreshing acidity — a deliberate counter to both the lean tanrei karakuchi of Niigata and the overtly fruity ginjo mainstream. The brewery draws soft natural spring water from the Settsu and Ikoma mountain ranges, low in minerals and historically associated with the depth-forward Osaka brewing tradition. Yamada Nishiki rice is fermented in small 10 kg batches using sandan-jikomi three-stage addition and ginjo-low temperatures extended through moromi to build textural complexity — a cold-fermentation discipline applied even to non-ginjo grades. The Daimon 55 designation signals a seimaibuai of 55%, placing it squarely in Junmai Ginjo territory with a polish depth that amplifies the rice's structural weight without sacrificing the clean lift the soft water provides. What sets this expression apart is the brewery's explicit refusal to scale: production remains entirely hand-crafted at every stage except koji mechanisation, with no plans to increase volume. The 300 ml format delivers the full house character in a format suited to single-service or exploratory pours.
