Kinmon Akita, one of Akita Prefecture's long-standing kura, built its reputation on the prefecture's legendarily soft snowmelt water — ultra-low mineral content that keeps fermentation gentle and flavors clean. The shizuku (雫) method applied here means the moromi mash is suspended in cloth bags and the liquid drips out solely under gravity, with zero mechanical pressing. That single production decision eliminates the bitter, astringent compounds that pressing would force from the fruit solids.
The base is Akita-grown ume plum, macerated into sake to produce a fruit liqueur-style umeshu. Shizuku extraction yields a noticeably clearer, more concentrated stone-fruit character than conventionally pressed umeshu — the liquid is richer yet structurally cleaner. No applied pressure also means the producer accepts a significantly lower yield per batch, a deliberate trade-off for quality over volume.
The result sits in a style that bridges umeshu and fine fruit liqueur: dense ume flesh, natural tartaric brightness from the fruit skin, and the soft water signature of Akita keeping sweetness from feeling heavy. Serve well-chilled or over a single large ice cube.
