Kitaoka Honten has brewed in Yoshino-cho, Nara, since 1868, when the seventh-generation head Sojuro consolidated the family's four-century-old commercial enterprise into sake production exclusively — a discipline that now extends to botanically-driven liqueurs made with the same precision applied to the brewery's flagship Yatagarasu sake. This Red Grapefruit Sour is produced via botanical infusion, steeping seasonal fruit in alcohol with sugar syrup, a method the brewery applies across its fruit and flower liqueur range rather than using concentrate or artificial flavouring. The water underpinning all Kitaoka production is Oku-Yoshino Forest Water (奥吉野の森林水) — drawn from mountain streams threading through the UNESCO World Heritage forests of Yoshino, characterised by low iron content and a soft mineral profile that prevents harshness in the finished liquid. The special feature here is lineage: this is a cocktail-base liqueur engineered for dilution and mixing, not sipping, from a house whose technical identity is built around umami depth and food-pairing harmony in sake — a deliberate transgression of the brewery's own flavour philosophy into the high-acid, bitter-citrus register. The grapefruit's natural pith bitterness is preserved rather than smoothed, giving bartenders a structurally assertive base. As an NV expression, character is consistent across batches; best used within 12 months of purchase for peak citrus brightness.
