Noilly Prat has produced vermouth in Marseillan since 1813, and the method Louis Noilly devised remains structurally unchanged: base wines are left to age in 600-litre oak barrels stacked outdoors on the Étang de Thau waterfront, exposed to the full Mediterranean cycle of summer heat and winter cold for roughly eight months before a second year of aging in large foudres with a proportion of older rancio wine. That outdoor oxidative aging is the defining technical signature — no other major vermouth house does this at scale.
The vineyards sit on the sandy, shell-limestone soils of the Hérault coast, where the Étang de Thau moderates temperature and salt-laden air permeates the aging cellars. Picpoul de Pinet and Clairette are harvested, partially sun-dried to concentrate, then fermented dry before the oak regime begins. The finished base is blended with a proprietary mix of 20 botanicals — including Roman chamomile, nutmeg, and bitter orange peel — macerated in neutral spirit, then the blend is cold-stabilised and lightly filtered. The result is a bone-dry vermouth with pronounced oxidative depth that distinguishes it sharply from the fresher, unaged Franco-Italian style.
