Giffard Poire Williams (William Pear Liqueur ) (700 ml)
฿889
When Émile Giffard founded his liqueur house in 1885, he applied a trained pharmacist's discipline to flavour extraction — isolating botanical essences with chemist's precision rather than sweetening his way to palatability. That founding logic governs the Poire Williams today. William pears are macerated in neutral spirit distilled from sugar beet, with light, temperature, and oxygen carefully controlled across the steeping period to preserve the fruit's volatile aromatics intact — the same methodology applied to every expression in the Avrillé facility on Avenue de la Violette, near Angers in the Loire Valley, historically France's most productive agricultural corridor. The Loire's moderate, humid microclimate and the house's proximity to French fruit growers — 65% of fruit and plant purchases sourced from French producers — means raw material quality is treated as a production variable, not an afterthought. What distinguishes this expression within the category is Giffard's deliberate refusal to engineer confected sweetness: the maceration targets the pear's full aromatic register, from the green, slightly underripe top notes through to the ripe, honeyed core, rather than flattening it into a single syrupy impression. The result is a fruit liqueur with unusual aromatic fidelity — the kind of precision that makes it as useful as a technical cocktail component as it is served simply chilled.
