Giffard Maraschino (700 ml)
฿889
When pharmacist Émile Giffard founded his Avrillé house in 1885, he applied a chemist's discipline to flavour extraction — a methodology that still governs every expression produced today, including this Maraschino. Rather than chasing the confected sweetness common in mass-market cordials, Giffard isolates the purest aromatic essence of each ingredient before blending. Maceration in neutral spirit distilled from sugar beet forms the technical backbone, with duration and conditions — light, temperature, oxygen — tightly controlled to preserve colour integrity and true-to-source aroma. The base is then sweetened with sugar beet sugar, maintaining the house's agricultural coherence within the Loire Valley, historically France's second-largest farming region. What distinguishes this expression within the Maraschino category is Giffard's refusal to replicate competitors' profiles: the house deliberately builds each SKU to stand apart, meaning this Maraschino prioritises botanical fidelity over the syrupy, one-dimensional sweetness that plagues many European counterparts. The result sits at a medium sweetness register with no detectable bitterness — clean, precise, and built for both cocktail integration and standalone sipping. As a non-vintage blended product, consistency across batches is guaranteed by mandatory tasting before bottling.
