The Bitter Truth was founded in Munich in 2006 by bartenders Alexander Hauck and Stephan Berg specifically to revive pre-Prohibition aromatic bitters that had vanished from European back bars — Creole Bitters being their direct homage to the New Orleans style that dominated American cocktail culture before 1920.
Produced in Bavaria, the bitters use a high-proof rye spirit base macerated with a proprietary blend of Creole-inspired botanicals including gentian root, cassia bark, and aromatic herbs, drawing on the layered spice tradition of Louisiana apothecary bitters. The maceration process extracts both bitter and aromatic compounds without distillation, preserving the full botanical spectrum. The product is bottled without chill-filtration, retaining natural oils that would otherwise be stripped.
What separates this expression from generic aromatic bitters is its deliberate Creole profile — heavier on warm baking spice and earthy root bitterness than the more citrus-forward Angostura style, making it a functional substitute in Sazeracs and Vieux Carrés where authenticity of flavor register matters. The 200 ml format is designed for professional bar use.
