The Bitter Truth was founded in Munich in 2006 by bartenders Adam Elmegirab and Stephan Berg at a moment when aromatic bitters had nearly vanished from European back bars, with most classic recipes locked inside pre-Prohibition American texts. Their Chocolate Bitters was engineered specifically to resurrect that lost category for professional use. The base is a high-proof neutral spirit into which real cacao and a proprietary blend of complementary botanicals — including warming spice elements — are cold-macerated rather than distilled, preserving the raw, resinous depth of the raw ingredients. No artificial flavouring, colouring, or sweeteners are used, which keeps the bitterness dry and functional rather than confectionery. At 39% ABV, the concentration is calibrated for dash-level dosing: a few drops shift the aromatic architecture of a cocktail without adding perceptible sweetness. What separates this expression from most chocolate bitters on the market is its pronounced roasted-cacao dryness — closer to 100% dark chocolate than to any liqueur — making it genuinely bitter rather than sweet-adjacent. A few dashes integrate immediately into stirred spirits-forward drinks, with the botanical complexity unfolding over minutes in the glass.
