Kosapan is a Khao Yai-based craft distillery that has built its identity around Thai agricultural ingredients, partnering with Kad Kokoa — Thailand's pioneering bean-to-bar chocolate brand — to source cacao grown in Thai soil as the defining botanical of this expression. That collaboration is the product's entire premise: a gin where cacao, not juniper, leads the aromatic architecture.
Khao Yai's elevated plateau, sitting roughly 300–800 m above sea level, delivers cooler nights and high humidity that slow botanical maturation and concentrate aromatic compounds in locally grown ingredients. The distillery draws on this regional agricultural identity rather than importing standard gin botanicals.
The spirit is distilled using Thai-grown cacao from Kad Kokoa's single-origin sourcing network, combined with a supporting cast of local botanicals. The cacao contributes roasted, earthy depth that repositions this firmly outside the London Dry template — juniper is present but subordinate.
What makes this unusual: it is one of very few gins globally built around a named, traceable craft chocolate brand as co-producer, making the cacao provenance as documented as the spirit itself.
