When Kiuchi Brewery — founded in 1823 by Kiuchi Gihei as a sake operation in Kounosu, Naka City, Ibaraki — launched craft beer production in 1996, the White Ale was the expression that carried two centuries of fermentation instinct into a Belgian witbier format. Brewed at the Nukada Brewery facility using medium-soft well water drawn on-site in Ibaraki, a prefecture historically responsible for roughly 27% of Japan's domestic barley production, the water's low mineral load preserves the delicate spice additions without hardening the finish. The grain bill layers malted wheat, torrified wheat, and flaked wheat over a pale malt base, producing the characteristic haze of an unfiltered witbier; adjuncts of coriander, orange peel, nutmeg, and orange juice are added during the boil, with Styrian Goldings and Perle hops kept deliberately restrained at 13 IBU. The beer is unfiltered and bottle-conditioned at 5.5% ABV, meaning active yeast sediment continues slow secondary fermentation in the bottle — a direct echo of the brewery's sake-conditioning philosophy applied to a Belgian style. What separates this from any European witbier is institutional: the same family that manages koji fermentation and cedar-cask sake maturation is making every production decision here, and that cross-disciplinary restraint is visible in how the spice register is calibrated — present but never dominant. Drink fresh; the bottle-conditioning yeast is at its most expressive within 12 months of packaging.
