Jacob's Creek Double Barrel Chardonnay originates from the warm, continental Barossa Valley in South Australia, a region defined by red volcanic soils and diurnal temperature swings that preserve acidity in white varieties despite hot growing seasons.
The defining technique here is dual-barrel aging: fruit is matured in both French oak (typically 40–50% new) and American oak (typically 30–40% new), with the remainder in stainless steel or neutral vessels. This split-cooperage approach allows winemakers to layer French oak's subtle spice and mineral complexity against American oak's broader vanilla and caramel extraction, creating textural depth without overwhelming varietal character. Fermentation occurs in temperature-controlled conditions to retain stone-fruit definition.
The special feature is the balance between oak influence and Chardonnay's natural richness—dual-barrel maturation, when executed with restraint, avoids the one-dimensional oakiness that can dominate single-oak-regime expressions. The result is a wine with layered mouthfeel and extended finish.
