When Sylvain Pataille — a trained oenologist who consults for roughly 15–20 Burgundy domaines — founded his estate in 1999 on entirely leased land, he identified La Charme aux Prêtres as one of Marsannay's most compelling white-wine sites: white clay with a pronounced iron content, a soil profile that delivers both textural weight and a saline, ferrous edge that distinguishes it from the limestone-dominant lieux-dits nearby. The iron-rich clay retains moisture through dry spells while imposing a natural tension on the vine, producing Chardonnay of density without heaviness.
Vinification follows indigenous yeast fermentation after a long, slow pressing with a vertical press and extended skin contact before pressing — a technique that builds phenolic grip and aromatic complexity before the juice even sees oak. Aging proceeds in older 350L barrels at a low new-oak percentage, preserving site character over wood influence; no sulphur is added during fermentation, with minimal SO₂ introduced only at bottling. The wine is filtered but not fined. In 2021 — a cool, frost- and mildew-pressured vintage that cut yields sharply — Marsannay's inherent freshness and mineral precision are fully expressed, producing a wine of taut acidity and site-specific tension.
