Sancerre - Grand Chemarin (Magnum) (1.5 L)
฿฿฿
Story: Vincent Pinard's family has farmed the Grand Chemarin vineyard in Sancerre for generations, building a reputation for wines that express the limestone bedrock rather than oak influence—a deliberate rejection of the international trend toward wood-aged Sauvignon Blanc in the 1990s.
Terroir: Grand Chemarin sits on the caillottes (limestone-clay composite) soils characteristic of eastern Sancerre, at moderate elevation on a southeast-facing slope. The chalky subsoil imparts mineral tension and flint-driven aromatics.
Technique: Unoaked fermentation in stainless steel preserves varietal expression and acidity. Sauvignon Blanc fruit is harvested at optimal ripeness and fermented cool to retain aromatic volatiles. The wine undergoes minimal intervention—no malolactic conversion—maintaining the crisp, linear profile Sancerre limestone demands.
Special Feature: The magnum format (1.5 L) slows oxidation and allows subtle tertiary development over 5–8 years, making this an investment-grade expression for cellaring.
Drinking Window: 2024–2032. Peak aromatic intensity now; secondary mineral complexity develops through 2028.

Sommelier’s pick: Grilled Dover sole with beurre blanc—the wine's acidity cuts through butter; flint notes echo the fish's delicate brine. · Seared scallops with lemon and thyme—herbaceous notes in wine complement herb garnish. · Crudités with anchovy dip—saline minerality bridges anchovy umami and vegetable sweetness.
