Nik Weis took over his family's St. Urbans-Hof estate in 2000 and deliberately separated the Schiefer (schist) label as a declaration of terroir philosophy: the wine is named after the rock, not the village. The Saar sits at the northern edge of viable Riesling cultivation, where cool temperatures and long ripening seasons build tension that warmer Mosel sites cannot replicate.
Vines grow in pure blue Devonian schist — the same compressed slate that fractures into vertical plates, forcing roots deep while reflecting heat onto the canopy and draining freely. That combination produces Riesling with pronounced mineral salinity and high natural acidity even in riper years.
Fermentation takes place in stainless steel to preserve primary fruit and site character without oak interference. The wine is bottled with residual sugar kept low, positioning it in the dry-to-off-dry spectrum that amplifies the schist's saline, citrus-pith character rather than masking it with sweetness.
