The cooperative's winemaking protocol emphasizes mineral expression: temperature-controlled stainless-steel fermentation at 14–16°C, no malolactic conversion, and 8–10 months sur lie aging in inert vessels preserve the wine's acidity and prevent oak overlay. This restraint is deliberate—Vaillons' limestone terroir demands no intermediary. The 1er Cru designation reflects vineyard classification, not production technique, yet La Chablisienne's commitment to unoaked aging remains the stylistic anchor.
