Chassagne-Montrachet sits on the southern Côte de Beaune, where limestone-rich soils with clay subsoils and a southeast-facing aspect concentrate the mineral tension that defines the appellation's white wines. The combination of well-drained topsoil and cool subsurface moisture retention produces Chardonnay of inherent structure and precision. Winemaker Véronique Boss-Drouhin directs a slow pneumatic pressing protocol, separating free-run juice before alcoholic and malolactic fermentation in French high-forest oak barrels using indigenous yeasts; élevage runs 12–18 months with light bâtonnage and 10–25% new oak seasoned approximately three years before coopering — a deliberate restraint that keeps oak subordinate to terroir. What sets Drouhin apart from peers of comparable négociant scale is the strict portfolio discipline: every white in the range is 100% Chardonnay, no appellation blending, and all estate fruit is horse-ploughed. The 2015 vintage delivered generous phenolic ripeness and naturally low acidity in Burgundy, producing whites of textural richness and early accessibility, with sufficient structure for continued development through the late 2020s.
