The wine is produced via the Charmat method (bulk fermentation in pressurized steel tanks), a technique that preserves delicate floral aromatics and maintains the wine's residual sugar at levels typical of dolce classification (>50 g/L). Native yeast fermentation contributes subtle complexity beneath the primary fruit expression. The dosage structure—balancing residual sweetness with the natural acidity of early-harvest grapes—creates a wine designed for immediate consumption rather than extended cellaring.
The special character of this expression lies in its restraint: despite the dolce designation, the wine avoids cloying heaviness through brisk carbonation and the preservative effect of CO₂, which sharpens perceived acidity on the palate.
