Dom Perignon 2015
฿10,419
Dom Pérignon is the only major Champagne house that produces exclusively vintage wine — no harvest, no release — a constraint that makes the 2015 declaration a deliberate statement of confidence in a climatically extreme year. A hot, drought-stressed summer across the Marne and Côte des Blancs was interrupted by August rains, forcing a harvest that demanded precision in sorting and pressing. Grapes drawn from nine fixed crus — Chardonnay from Avize, Cramant, Chouilly, and Le Mesnil-sur-Oger; Pinot Noir from Aÿ, Bouzy, Verzenay, Mailly-Champagne, and Hautvillers — all rooted in deep chalk and limestone that acted as a moisture reservoir through the drought stress, concentrating phenolics while preserving mineral tension. Vinified in stainless steel with full malolactic fermentation, using two distinct yeast strains for primary fermentation and two further strains for the in-bottle prise de mousse — a four-yeast architecture Chef de Cave Vincent Chaperon considers central to long-term ageing capacity. Aged a minimum of eight years on lees, undisgorged, in chalk cellars; disgorged January 2023; dosage 4.5 g/L; blend 51% Pinot Noir / 49% Chardonnay. Zero oak contact at any stage — all complexity is lees-derived and reductive. The 2015 sits at the richer, more textural end of the DP spectrum: citrus pith, white peach, white pepper, and a saline chalk minerality underpin a wine rated 97 pts James Suckling, 95 pts Wine Advocate, 95 pts Vinous; drinking now through 2040+.
