Barbe-Nicole Clicquot invented the riddling table in 1816 — and La Grande Dame 2012 is hand-riddled by that same logic: every bottle turned by hand, a deliberate refusal of the gyropalette that governs every other cuvée in the house. The 2012 growing season was difficult until a warm September rescued the Pinot Noir crop, which the house oenologue called 'one of the best vintages for the last 20–30 years' for this cuvée. The blend draws exclusively from Grand Cru chalk hillsides: 90% Pinot Noir from Verzy, Bouzy, Verzenay, Aÿ, and Ambonnay, plus 10% Chardonnay from Avize and Le Mesnil-sur-Oger — shallow craie soils over the Montagne de Reims and Côte des Blancs delivering maximum drainage and the mineral tension that anchors the wine's structure. Vinification is 100% stainless steel (no oak at any stage, unlike the house's Yellow Label and Vintage Brut), preserving the raw chalk-driven precision of each Grand Cru site. Aged 7 years on lees, disgorged September 2019, dosed at just 6 g/L — low enough to leave the autumnal spice, baked apple, white pepper, and saline finish fully exposed. At 90–92% Pinot Noir, La Grande Dame sits structurally apart from Chardonnay-led prestige cuvées: this is Champagne built on red-grape architecture, released only in exceptional Pinot Noir years.
