The house sources Muscat à Petits Grains fruit, traditionally favored for aromatic sparkling production due to its natural low alcohol potential and high volatile ester expression.
The wine undergoes secondary fermentation in bottle, a méthode champenoise-adjacent process that generates fine, persistent carbonation rather than force-carbonation. Fermentation is arrested at residual sugar levels between 30–50 g/L, preserving the varietal's floral and stone-fruit character while maintaining the off-dry profile that defines the category. The resulting alcohol sits at approximately 5.5–6% ABV, positioning it as an aperitif-weight expression.
Special feature: The low alcohol and natural fruit sweetness make this one of the few mainstream Australian sparkling wines designed explicitly for warm-climate consumption without food—a transgression against the dry-wine orthodoxy that has made it a staple in Southeast Asian hospitality.
Drink on release; the wine's primary fruit character and delicate mousse are best appreciated within 2–3 years of vintage.
