Rosé Impériale draws on that same discipline: a Pinot Noir-dominant NV blend sourced across 200+ crus spanning Montagne de Reims, Vallée de la Marne, Côte des Blancs, Sézanne, and the Aube, with 20–30% reserve wines anchoring house consistency vintage to vintage. Beneath Épernay, 28 km of chalk cellars — the most extensive in Champagne — maintain constant humidity and temperature during lees ageing that exceeds the AOC minimum, building the seductive, slightly creamy palate that defines Moët's deliberate contrast to austere, yeast-driven house styles. Fermentation takes place in thermoregulated stainless steel, with systematic malolactic fermentation — a technique Moët pioneered in the region — softening acidity and amplifying the red-fruit vivacity characteristic of the rosé expression.
