Piccini's Prosecco DOC originates in the Prosecco appellation of Veneto, a region defined by rolling hills with calcareous marl and limestone soils at moderate elevation—conditions that favor the aromatic white varieties central to this style. The wine is produced via the Charmat method (tank fermentation), where base wine undergoes secondary fermentation in sealed stainless steel under controlled temperature, preserving the delicate floral and fruit aromatics characteristic of the region rather than the extended autolysis typical of Champagne-method production. This technique yields a wine of moderate alcohol (typically 11–11.5% ABV) with fine, persistent bubbles and crisp acidity. The special feature of Prosecco DOC—as opposed to the broader Prosecco IGT category—is the stricter geographic and varietal control: the wine must derive primarily from Glera grapes grown within the defined zone. Piccini, a historic Tuscan house with significant Veneto operations, sources from established vineyard parcels in this limestone terroir. The result is a dry to off-dry sparkler built for immediate enjoyment, typically consumed within 1–2 years of release.
