When Eugène-Aimé Salon produced his 1905 vintage — 100% Chardonnay, single cru, single year — he broke the received wisdom that only Pinot Noir could age. Delamotte, founded in 1760 and co-directed today by Didier Depond, is structurally bound to that legacy: in years Salon does not declare, contracted Le Mesnil grapes flow directly into Delamotte, making this the only Champagne house with a documented, continuous supply link to one of the category's most coveted single-vintage cuvées.
The 2007 Blanc de Blancs draws on Grand Cru Chardonnay from Le Mesnil-sur-Oger, Avize, Oger, and Cramant — all Côte des Blancs — rooted in deep belemnite chalk, rich in marine fossils, which delivers exceptional drainage and the saline, mineral tension that defines this corridor. Cool nights preserve natural acidity that no winemaking intervention can replicate.
Vinification is entirely in stainless steel under temperature control; malolactic fermentation is blocked, preserving the full tartaric spine of the vintage. No oak touches the wine at any stage. Extended lees aging in chalk cellars at Le Mesnil builds autolytic complexity without softening the chalk-driven structure. Dosage sits in the Brut register at approximately 5–5.5 g/L.
What distinguishes Delamotte within its category is precisely this structural position: it is the only NV-anchored house whose non-vintage fruit supply is formally linked to a declared single-vintage house — meaning the 2007 carries Le Mesnil DNA that, in a stronger year, would have worn the Salon label. The 2007 vintage in Champagne delivered precise, taut fruit with firm acidity; at current age the wine is in a generous secondary window, with chalk minerality and lees-derived brioche in full dialogue. Drink through 2028.
