SaleChianti Rufina's hillside vineyards sit 300–500 metres above sea level on the eastern flank of the Chianti zone, where cooler nights and morning mists from the Sieve River valley slow ripening and preserve acidity—a signature of the subregion since the 18th century. I Veroni sources from this cooler microclimate, where clay-limestone soils demand extended hang time for phenolic ripeness.
The wine undergoes traditional Sangiovese fermentation in temperature-controlled stainless steel, followed by 12 months in large Slavonian oak casks, preserving varietal character while adding subtle vanilla and spice structure. This cask regime—neither new French oak nor extended aging—reflects Rufina's historical preference for balance over extraction.
The result is a medium-bodied, high-acidity expression that channels Sangiovese's characteristic red-cherry and dried-herb profile with the mineral tension of limestone terroir. Drinking window: 2024–2032.
