Montemajor's Quattronotti anchors itself in Puglia's Salento peninsula, where Negroamaro vines root into calcareous clay soils at modest elevation, absorbing the Adriatic's reflected heat. The appassimento technique—partial air-drying of harvested grapes for 10–15 days before crushing—concentrates sugars and tannins, a centuries-old Puglian method that transforms the naturally dark-skinned Negroamaro into a wine of amplified structure and dried-fruit density.
Fermentation occurs in temperature-controlled stainless steel, preserving the varietal's black-cherry and plum character while the extended maceration on skins extracts the grape's inherent tannin load. Aging in neutral oak or large format cask allows the appassimento's raisin and prune notes to settle without oak overlay, keeping the focus on terroir and technique. The result is a wine of medium-full body and gripping tannin—not delicate, but honest to its method and place.
Quattronotti represents the unadorned Puglian tradition: no international styling, no over-extraction. Drink 2024–2028 for optimal structure-to-fruit balance.
