Three Dark Horses sources fruit from McLaren Vale's limestone plateau, where Grenache thrives in the region's Mediterranean climate and well-drained calcareous soils at 80–120 metres elevation. The winery employs wild yeast fermentation in open concrete vats, a labour-intensive choice that extends skin contact and captures ambient microbial complexity. Minimal intervention during élevage—no new oak—allows the wine's primary structure to emerge unadorned. The result is a transparent expression of McLaren Vale terroir: the limestone substrate imparts mineral tension, while the warm growing season concentrates red stone fruit without overripeness.
