Soul of a Lion draws its name from a deliberate transgression: Daou Vineyards' flagship Cabernet Sauvignon intentionally breaks the Paso Robles mold by emphasizing structure over fruit-forward immediacy. The vineyard sits on the west side of Paso Robles, where calcareous limestone soils and afternoon Pacific cooling create tension between ripeness and acidity—a site profile that rewards patience in the cellar.
The wine undergoes co-fermentation with Petit Verdot in open-top wooden vats, a technique that extends skin contact and deepens tannin integration rather than relying on post-fermentation blending. Aging occurs in French oak (60% new, 40% neutral) for 18 months, allowing the limestone minerality to assert itself against oak spice. The result is a wine built for 15–20 year cellaring, where secondary flavors emerge as primary fruit softens.
What distinguishes this expression is its refusal of the ripe, jammy profile typical of warm-vintage Paso Robles: instead, it channels the region's cooler microclimates and mineral substrates into a wine of architectural precision.
