A traditionally-styled Amarone made from partially dried Corvina and Rondinella grapes, aged for years in large Slavonian oak casks to produce a drier, more austere wine than most modern Amarone.
Bertani's Amarone della Valpolicella Classico is sourced from the Tenuta Novare estate in the Valpolicella Classica zone west of Verona, where Corvina, Corvinone and Rondinella grapes are laid out on bamboo racks (arele) to dry (appassimento) for around 78 days before pressing. Fermentation is slow, running in cement tanks for weeks rather than days, which the house credits for the wine's depth of alcohol and glycerin without excess residual sugar. The must then ages for an unusually long stretch in large old Slavonian oak botti — around seven years per the house's current spec — followed by further time in bottle before release. The result is Bertani's signature: a drier, leaner, more structured Amarone than the riper, sweeter-edged style that became common from the 1990s onward, with tones of dried cherry, tobacco, leather and bitter orange peel rather than jammy fruit or heavy oak spice. It is built for long cellar life and is often described as the benchmark for the 'old-style' Amarone, in contrast to the softer, more immediately fruity wines many competitors moved toward.
Producer history
Bertani was founded in 1857 by brothers Giovan Battista and Gaetano Bertani in the Valpantena valley north of Verona, after Gaetano traveled to Burgundy to study viticulture under Jules Guyot. The house built an early reputation on quality-focused winemaking and won recognition from the Italian royal house (permission to use the Savoy emblem on labels in 1923). Bertani acquired the Villa Novare estate in the heart of Valpolicella Classica in the 1950s and released its first official Amarone vintage in the late 1950s, becoming one of the producers most credited with defining Amarone as a distinct, dry wine category rather than a byproduct of sweet Recioto production. The estate has remained associated with a deliberately traditional, long-aged style even as much of Valpolicella modernized toward riper, shorter-aged wines.
Signature pairings
- Braised oxtail or beef cheek — The wine's firm tannin and dried-fruit, savory character need slow-braised, gelatinous beef cuts to soften the tannin and match the intensity built up over years of cask aging.
- Aged Grana Padano or Parmigiano-Reggiano — Hard, nutty aged cheeses have enough salt and umami density to stand up to Amarone's tannin and dried-fruit concentration without either element overwhelming the other.
- Thai-style stewed beef in dark soy and star anise (neua toon) (เนื้อตุ๋น) — A slow-braised, only lightly spiced beef dish echoes the oxtail pairing logic — soft tannin-taming protein and warm spice notes (star anise, cinnamon) that harmonize with the wine's dried-fruit and leather tones; avoid versions with heavy chili to keep the tannin in balance.
