Tormaresca Neprica emerges from the Salento peninsula's limestone and clay soils, where Antinori's estate sits at modest elevation in one of southern Italy's most sun-exposed microclimates. The Negroamaro varietal—native to Puglia and meaning "black bitter"—ripens to phenolic maturity in this heat-stressed environment, concentrating dark fruit and mineral density.
The wine undergoes temperature-controlled fermentation in stainless steel, preserving aromatic precision, followed by 12 months in French oak (a mix of new and neutral barrels) to add structural complexity without overwhelming the varietal's inherent earthiness. Malolactic fermentation occurs in barrel, softening acidity while building mid-palate texture.
Neprica's signature lies in its volcanic mineral signature—a salinity and graphite note uncommon in Negroamaro—derived from Salento's ancient geological substrate. This is not a fruit-forward expression; it is a wine of place, where tannin and acidity remain purposefully prominent, demanding food pairing and cellaring potential.
