Le Mortelle sits on the Tuscan coast near Bolgheri, where the Tyrrhenian Sea moderates temperature swings across clay-rich soils with limestone substructure. Antinori's coastal vineyard captures the cooling maritime influence that extends ripening and preserves acidity in Cabernet Sauvignon.
The wine undergoes fermentation in temperature-controlled stainless steel, followed by aging in French oak (mix of new and neutral barrels) for 12–14 months. This regime builds structure without overwhelming the fruit, allowing the coastal terroir's mineral spine to remain visible. Malolactic fermentation occurs in barrel, softening tannins while retaining freshness.
Bolgheri's maritime position—cooler than inland Chianti—produces Cabernet with darker fruit intensity but also saline minerality and herbal undertones that distinguish coastal Tuscan expressions from warmer inland sites. The wine drinks well from release and will age 8–12 years.
