Penfolds Bin 8 Shiraz Cabernet
฿1,495
Bin 8 occupies a deliberate position in the Penfolds hierarchy: it draws on the same Kalimna property in the Barossa Valley — 290 hectares of ancient, phylloxera-free sandy loam and deep alluvial soils — that supplies fruit for wines many times its price, then matures in oak previously seasoned by Grange, the house's flagship. This is not a coincidence of logistics; it is a conscious decision to transmit winemaking DNA downward through the range.
Barossa's deep, low-vigour sandy loam forces vine roots deep, concentrating flavour and producing the mid-palate density that defines the house style. The Shiraz/Cabernet Sauvignon blend follows the same structural logic as Bin 389 — Shiraz supplying dark fruit weight and spice, Cabernet lending backbone and cassis definition — though Bin 8 sits at a more approachable extraction point. Maturation in seasoned American oak hogsheads (larger than standard Bordeaux barriques) delivers the characteristic vanilla and cedar integration without overwhelming primary fruit.
What separates Bin 8 from peers at this price is provenance of vessel: the oak has already shaped Grange, meaning the tannin structure is softer and the integration faster, yet the aromatic imprint of the house — ironstone, dark plum, warm spice — remains unmistakable. Drink now through the near term.
