The Macallan Harmony Collection Phoenix Honey Orchid Tea (700 ml)

The Harmony Collection is The Macallan's deliberate departure from its own cask-first orthodoxy: each release introduces a botanical co-author alongside the sherry-seasoned oak that has defined Easter Elchies since Alexander Reid founded the distillery in 1824. The Phoenix Honey Orchid Tea edition draws its secondary character from Mi Lan Xiang (Phoenix Honey Orchid) Dan Cong oolong, a high-mountain cultivar from Guangdong's Fenghuang range, whose floral-honey aromatic compounds are woven into the whisky through a proprietary tea-infusion finishing process — a technique with no precedent in the Speyside canon. The spirit originates on the Easter Elchies Estate, 485 acres on the north-west slopes of the River Spey valley near Craigellachie, where alluvial soils and on-site spring water feed a 17-tonne lauter mash tun and 24 famously squat spirit stills of just 3,900 litres each — craft-distillery scale — producing the heavy, oily new make that is the structural prerequisite for sherry-cask maturation. Maturation proceeds in sherry-seasoned European and American oak casks, sourced through Macallan's vertically integrated wood programme: staves air-dried, coopered, and Oloroso-seasoned in Jerez before filling. Natural colour only; no added caramel (E150a). The special feature is categorical: no other Speyside distillery has formally co-authored a whisky with a named single-cultivar oolong at this price tier.
