−3%The Nikka Discovery Series exists because Masataka Taketsuru built Yoichi in 1934 to be a laboratory as much as a distillery — and this expression takes that mandate literally, isolating a single aromatic yeast strain as the sole variable against Yoichi's otherwise fixed production template. The distillery sits at the base of the Shakotan Peninsula on Hokkaido's northwest coast, facing the Sea of Japan, with snowmelt from the Yoichi River as its water source and a cool, fog-laden maritime microclimate that slows maturation and concentrates ester development. Yoichi's straight-head pot stills with downward lyne arms are fired directly by coal — one of the last distilleries in the world to retain this method — suppressing reflux and retaining heavier congeners that would be stripped away by steam heating. Where the standard Yoichi expression relies on that coal-fire character and coastal peat as its primary identity, the Discovery Aromatic Yeast edition deliberately foregrounds fermentation-derived esters, making yeast — not cask or peat — the narrative protagonist. This is the transgression: in a category where oak and smoke dominate the conversation, Nikka turns the dial entirely to the washback. The result is a Yoichi that retains its maritime backbone while amplifying fruity, floral fermentation compounds that the distillery's heavy-congener distillation style would ordinarily subordinate.
