Bowmore
Bowmore 25 Years Old (700 ml)
฿40,999
When Bowmore's No.1 Vaults were built in 1779 on the south-eastern shore of Loch Indaal, the warehouse sat partially below sea level — a structural accident that became the distillery's most consequential maturation decision. Tidal Atlantic air presses directly against the stone walls year-round, maintaining near-constant humidity and temperature while imprinting every cask with a saline maritime character no inland warehouse can replicate.
The River Laggan, channelled through ancient peaty ground via a lade built in the 1830s, feeds a spirit distilled from barley peated to 25–30 ppm phenols — a deliberate middle register that produces campfire smoke rather than the medicinal intensity of Islay's southern shore. Pear-shaped stills with slightly ascending lyne arms drive copper reflux, preserving the fruity, honeyed character that distinguishes Bowmore from its neighbours.
At 25 years, the cask regime — ~86% ex-bourbon American oak hogsheads, ~14% European oak ex-Oloroso sherry butts — has had sufficient time to fully integrate: the bourbon wood contributes vanilla and dried coconut while the sherry fraction layers dark chocolate and Seville orange peel over the brine-laced peat base. What is unusual here is the sheer duration spent below sea level in No.1 Vaults, the only confirmed sub-sea-level Scotch maturation warehouse in Scotland, producing a saline depth that no peer expression at this age replicates. The extended maturation softens the peat to a smouldering, almost sweet register while amplifying the oceanic salinity — drink now through the next decade.
