Kavalan Distillery Select No.1 Single Malt Whisky (700 ml)

On Burns Night 2010, a Kavalan expression defeated three Scotch whiskies in a blind tasting held in Leith, Scotland — the moment that forced the industry to reconsider whether cool, slow maturation was a prerequisite for great single malt, or merely a habit of geography. Yuan Shan Distillery sits in Yuanshan Township, Yilan County, at the collision point of cold air descending from the Xueshan (Snow Mountain) Range and humid Pacific Ocean breezes, drawing process water from Snow Mountain springs naturally filtered through gravel and sand. Summer warehouse temperatures reach 42°C on upper floors with no air-conditioning — a deliberate non-intervention that drives wood extraction at a pace unmatched in any Scottish or Irish context, compressing the equivalent of 15–25 Scottish maturation years into 4–6 Taiwanese ones.

Distillery Select No.1 is built from 100% unpeated malted barley (imported from Scotland and Finland), double-distilled in Forsyths copper pot stills with a spirit cut narrowed to 65–55% ABV to maximise ester complexity. Fermentation runs a three-stage cycle — a core alcohol round, a 20-hour ester-development pass with a dedicated 'fruit producer' yeast strain, and a final ~30-hour lactic round — totalling 60–72 hours. The resulting new-make is matured across multiple cask types including ex-bourbon American oak, ex-Oloroso, and ex-port before vatting, then bottled at 40% ABV. What distinguishes this expression within the core range is its role as an accessible entry point to the house's tropical-fruit signature — mango, pineapple, papaya, and vanilla cream — without the single-cask intensity of the Solist tier, making the distillery's subtropical terroir legible in its most transparent form.
