In January 2010, a Kavalan expression defeated three Scotch whiskies in a blind tasting held in Leith on Burns Night — a result that forced the industry to reconsider whether cool, slow maturation was a prerequisite for great single malt, or merely a habit. Podium is the expression that distils that argument into a bottle.
Yuan Shan Distillery sits in Yuanshan Township, Yilan County, at the convergence of cold air descending from the Xueshan (Snow Mountain) Range — peak elevation 3,886 m — and humid Pacific Ocean breezes. Snow Mountain spring water, filtered through gravel and sand, feeds the mash tuns. Un-air-conditioned multi-storey warehouses reach 42°C on upper floors in summer, driving wood extraction at a pace that renders four to six Taiwanese years broadly equivalent to 15–25 years in Scotland.
Production begins with unpeated malted barley imported from Scotland and Finland, mashed over eight hours in copper tuns, then fermented across a three-stage cycle totalling 60–72 hours — a 'fruit producer' yeast strain in the second stage is specifically tasked with ester development. Double distillation runs through Forsyths copper pot stills, with the spirit cut narrowed to 65–55% ABV to maximise complexity. Podium draws on multiple cask types — ex-bourbon American oak alongside sherry and wine casks — bottled at 46% ABV.
What separates Podium from Kavalan's entry tier is deliberate cask layering at a higher bottling strength, amplifying the tropical-fruit intensity that Yilan's subtropical microclimate imprints on every drop of new-make spirit.
