When the Laing family divided assets in 2013, Stewart Laing took the Old Malt Cask range to Hunter Laing & Co. with its founding principle intact: one cask, one distillery, no intervention. This Craigellachie 18 Year is the direct expression of that philosophy — a single sherry butt selected by Hunter Laing's monthly tasting panel from stocks laid down at Craigellachie distillery, a Speyside operation whose worm-tub condensers produce a deliberately heavy, sulphurous new-make that demands long maturation to resolve.
Eighteen years in a sherry butt has worked that muscular spirit into layers of dried fruit, meat extract, and dark chocolate — the cask's oxidative sugars meeting Craigellachie's characteristically weighty distillate. Bottled at 50% ABV — Hunter Laing's deliberate house standard, not cask strength — the whisky retains full texture without the raw heat that pure cask-strength delivery can impose. No chill-filtration. No caramel colouring. The result is natural viscosity and an unmanipulated colour drawn entirely from the sherry wood.
What separates this from peers like Cadenhead's or Signatory is precisely that 50% ABV standardisation: a conscious editorial choice that prioritises integration over raw power, while preserving the single-cask unrepeatable identity that makes each OMC release finite. Once this cask is exhausted, the expression is gone — the cask number on the label is the only true identifier.
