When Stewart Laing separated Hunter Laing & Co. from the Douglas Laing family split in 2013, he carried with him the Old Malt Cask range and its founding discipline: one cask, one distillery, no intervention. Aultmore — a Speyside distillery whose soft, grassy, orchard-driven character is shaped by the Keith basin's low-lying farmland and the clean, mineral-light water of the Aultmore Burn — rarely surfaces as a named single malt, making any long-aged independent release a genuine rarity in the category.
This 21-year expression matures in a single cask (type and number stated on label), allowing the specific wood — whether refill ex-bourbon hogshead or ex-sherry butt — to layer over Aultmore's signature cereal softness across two decades without secondary finishing or blending across casks. Bottled at 50% ABV, non-chill-filtered and with no caramel colouring added, the 50% figure is not a dilution compromise but a deliberate house standard: Hunter Laing's monthly tasting panel sets this threshold to preserve texture and intensity while avoiding the raw heat that full cask strength can impose.
What separates OMC from peers such as Cadenhead's or Signatory is precisely this standardised-yet-unfiltered philosophy — the bottle you hold is a finite, unrepeatable object; once the cask is exhausted, the expression ceases to exist. Distillation year, bottling year, and cask number on the label are the true identifiers here, not the brand name alone.
