The production employs hiire (heat treatment) — a deliberate pasteurization step applied post-fermentation to stabilize the sake and extend shelf life without refrigeration. This technique, historically essential before modern cold storage, imparts subtle structural changes: it arrests enzyme activity and rounds the profile, distinguishing hiire-treated sake from nama (unpasteurized) counterparts.
Hiire sake occupies a functional middle ground in Japanese brewing: less volatile than nama, more aromatic than fully aged koshu. The heat treatment preserves the rice's subtle mineral backbone while softening any sharp fermentation edges, making the expression approachable without sacrificing depth.
