Produced in Fukushima Prefecture, a region celebrated for water purity and sake craftsmanship, this junmai expression reflects the mineral-rich groundwater that defines the terroir.
Brewed as a junmai (pure rice sake with no added alcohol), the expression relies entirely on koji enzymatic conversion and yeast metabolism for its character. The rosy coloration signals the presence of amino acids and organic compounds that develop through natural fermentation processes—a technical signature that distinguishes it from filtered, clarified styles.
