When Masaki Kobayashi took the helm of the 1872-founded Kobayashi Shuzo in the 1990s, he made a decision that nearly defied commercial logic: eliminate every non-ginjo SKU and stake the brewery's survival on ultra-premium, labor-intensive sake alone. The Yuzu expression extends that philosophy into the liqueur category, using the house's own ginjo sake — built on Nikko snowmelt groundwater drawn from the flat paddy plains of Oyama City — as its base spirit.
That water source is critical: the ultra-soft underground spring, fed by the Nikko mountain range, produces a clean, low-mineral fermentation environment that keeps the ginjo base delicate enough to let yuzu's volatile citrus oils dominate without interference. The ginjo sake base is fermented at low temperature using house proprietary yeast and hand-made koji, the same painstaking process applied to the flagship Junmai Daiginjo range. Yuzu fruit sourced from Tochigi is blended into this ginjo foundation, preserving the aromatic brightness characteristic of the variety — pithy zest, floral top notes, and a tart citrus core. No distilled alcohol additions are used, keeping the base fully Junmai-classified. What separates this from commodity yuzu liqueurs is the ginjo-grade foundation: most fruit liqueur producers use neutral spirit or table sake; Houou Biden uses the same aromatic, hand-crafted base that drives its cult reputation.
