Yamahai Junmai Ginjo (300 ml)
฿
Junmai Ginjo.
Yamahai fermentation — the labor-intensive precursor to modern sake brewing — defines Takasago's approach in Fushimi, Kyoto's historic brewing district. The subregion's soft water and cool climate create ideal conditions for the slow, natural yeast propagation that yamahai demands. Takasago polishes rice to ≤60% (ginjo threshold), then initiates fermentation using yamahai starter culture, a method that introduces wild lactobacillus and natural yeasts, extending fermentation and building complexity over weeks rather than days. The result carries the textural weight and savory depth characteristic of yamahai — a deliberate rejection of the clean, fruit-forward profile of modern sokujo methods. Fushimi water's mineral softness allows the koji enzymes to work without harsh edges, yielding a sake that balances the umami-forward character of yamahai with the delicate rice aromatics expected of ginjo-grade polish. This 300 ml format preserves freshness while offering a gateway into traditional fermentation philosophy.
