Azakura Shuzo has been the last sake brewery standing in Yokote City since absorbing rival Yokote Meijo in 1971 — a consolidation that left it sole custodian of a cold-brewing tradition the Yamauchi tōji guild of Akita's Sannai district helped pioneer. That tradition, kanjikomi, launches fermentation at the onset of winter and sustains it through the coldest months, using the snow-buried brewery environment as a natural temperature regulator. Brewing water is drawn from the brewery's own well, fed by snowmelt off the Ōu Mountain Range — characteristically soft water that suppresses harsh acidity and coaxes a mellow, rounded texture. The Yokote Basin's extreme snowfall is not incidental scenery; it is the refrigeration system. This Chouma Karakuchi (超辛口, super-dry) expression is brewed with 100% Akita-grown sakamai and fermented with the Akita Yukiguni UT-2 yeast, selected precisely for its reserved aromatic profile and stable acidity at low temperatures — a deliberate counter to the high-ester ginjo style dominant elsewhere in Japan. The result sits at the dry end of the SMV spectrum, with umami structure doing the work that fruit does in other breweries' lineups. What sets this expression apart within the Azakura range is the explicit pursuit of karakuchi dryness as a food-pairing architecture rather than a stylistic flourish — a category transgression in a prefecture better known for soft, approachable sake. Drink now through two to three years; best served at 10–15°C or warmed to 45°C to open the grain character.
