The product centers on fermented Japanese plum as its primary ingredient, combined with a neutral grain spirit base. The fermentation process develops the characteristic sour-sweet profile typical of traditional ume liqueurs, with the pickled plum contributing both acidity and umami depth. Umepon distinguishes itself through the use of whole umeboshi rather than fresh plum juice, lending a more complex, mineral-forward character than standard ume-shu. The liqueur sits at moderate alcohol strength, designed for both neat consumption and cocktail integration. Best served chilled or as a modifier in spirit-forward drinks.
