Shata Shuzou, established 1830 in Kanazawa, Ishikawa Prefecture, built its reputation on sake production in a region celebrated for soft water sourced from the Hakusan mountain range. Tengumai Umeshu represents the brewery's pivot into plum liqueur—a category where Japanese producers balance botanical authenticity against commercial sweetness.
The expression begins with Japanese ume (plum) fruit steeped in a neutral spirit base, then aged in traditional earthenware vessels that permit micro-oxidation and mineral exchange. This maturation method—distinct from glass or stainless steel aging—imparts subtle tannicity and deepens stone-fruit character without oak overlay. The 1800 ml format signals a product designed for household consumption rather than single-serve gifting, underscoring its role as a versatile digestif or cocktail base.
Tengumai avoids the cloying trap endemic to mass-market umeshu by maintaining restrained residual sugar and pronounced plum acidity. The result drinks closer to a fortified wine than a liqueur—approachable neat or diluted with soda, but structured enough for spirit-forward applications.
