Shinjirō Torii built Japan's first malt whisky distillery in 1923 at the misty confluence of the Katsura, Uji, and Kizu rivers — the same soft, mineral-light water historically drawn by tea master Sen no Rikyū. That water, and the whisky casks it helped season over decades, now form the backbone of Yamazaki Cask Umeshu. Ume plums are macerated directly in Yamazaki single malt whisky casks, meaning the fruit absorbs residual malt spirit, oak tannin, and whatever cask character — American white oak, ex-bourbon, or sherry — those barrels previously held. The result is categorically distinct from standard shochu-base umeshu: the plum's tartaric acidity and stone-fruit flesh are threaded through a whisky-oak scaffold rather than a neutral spirit base. Produced at ~25 m elevation in Shimamoto-cho, Osaka Prefecture, where the warm, humid microclimate that accelerates whisky maturation also intensifies the maceration of the ume. The defining transgression here is the cask itself — using spent Yamazaki barrels as the maceration vessel is a direct extension of Suntory's 'Tsukuriwake' philosophy of extracting maximum flavour diversity from a single site's infrastructure.
