Nakano BC traces its roots to a soy sauce shop founded in Kainan City in 1932, but it is the brewery's patented reduced-oxidation plum-steeping process — an innovation unusual for any regional Japanese producer — that defines its approach to umeshu and fruit liqueur production. That same technical discipline is applied here to hassaku, the thick-skinned, bittersweet citrus native to Wakayama Prefecture, a region that produces over 60% of Japan's plums and is equally celebrated for its Kii Peninsula citrus groves warmed by the Kuroshio Current. The warm, mild coastal microclimate of the Kii Peninsula concentrates both sugar and the characteristic bitter-pith aromatic compounds in hassaku fruit, which translate directly into the liqueur's profile: pronounced bitter-citrus rind alongside fresh juice sweetness. Nakano BC's production philosophy — rooted in cold maceration technique developed across sake, shochu, and umeshu categories — prioritises full flavour extraction while minimising oxidative degradation of volatile aromatics. What sets this expression apart within the umeshu/fruit liqueur category is the use of hassaku rather than ume: the fruit's natural astringency and grapefruit-adjacent bitterness produce a structural dryness that most fruit liqueurs from this region do not possess.
