Wakayama Prefecture supplies over 60% of Japan's plums, and the Kii Peninsula's warm, humid climate, moderated by the Kuroshio Current, produces fruit of concentrated sweetness and high acidity. Kishu honey replaces or supplements conventional rock sugar as the steeping medium, lending a floral, beeswax-edged sweetness distinct from standard umeshu sweetness profiles.
