Salvatore Averna received the recipe from the Benedictine friars of the Abbey of Santo Spirito in Caltanissetta in 1868 — a gift that came with the condition that production remain tied to Sicily. That monastic origin is not marketing lore; it anchors why the botanical bill leans on Mediterranean herbs, roots, and citrus rather than the Alpine flora that defines northern Italian amari.
Sicily's sun-intense, arid interior concentrates the essential oils in the island's bitter orange, lemon, and pomegranate peels — the same heat that stresses the botanicals also deepens their aromatic yield. The base spirit macerates with the full botanical blend, after which caramelised sugar and a proportion of fresh citrus juice are folded in, producing the amaro's characteristic dark, almost syrupy body at 29% ABV.
What separates Averna from lighter style amari is its pronounced caramel-and-citrus-peel backbone sitting beneath the bitterness rather than alongside it — the sweetness arrives first, the herbal bitterness resolves last. At 29% ABV it sits lower than most category peers, making it one of the few amari that functions equally as a digestivo neat or as a long-drink base without dilution killing the botanical structure.
